Listen: Edible Futures, in partnership with Mount Zero

We've long been fans of the inimitable Hilary McNevin's work (you might have noticed her stellar work in our monthly Mount Zero Hero features) and were thrilled to partner with her new podcast, Edible Futures, for a three episode run this year!

Hosted by Hilary, a Melbourne-based food writer and founder of Turnip Media, and produced by Luke McCredden, Edible Futures talks to chefs, restauranteurs, producers, farmers, creatives, trailblazers and amazing minds who are working towards a bright, sustainable and delicious future for all.

Our General Manager, Richard Seymour, was invited to sit down with Hilary for the inaugural episode to chat about our favourite topic: sustainability! Richard and Hilary discussed the regenerative farming practices we use at the Mount Zero grove, how we've applied that ethos to warehouse and production practices, and why healthy soil is key to a sustainable food future.

Richard also shared the key considerations for picking the freshest olive oil (it is a fruit juice, after all) and what flavour profiles result from different varieties of olive - plus, listen out for Rich's tips on using farro in your next osso bucco.

In Episode 4, Hilary got together with our friend - and Mount Zero Hero - Tom Sarafian of Sarafian Melbourne. Not only does his handmade hummus and toum consistently sell out in Melbourne, he's also an advocate for sustainability across his business. Tom shared the story of his brilliant career so far, his future plans, and explains why hand-picking the chickpeas for his hummus might take a little longer but helps him sleep at night.

In our final episode in partnership with Edible Futures, Burrum Biodynamics farmer Stephen Walter discussed how he and his family converted their 3000 acre property - that he was born on - from conventional to biodynamic farming. Burrum Biodynamics grow grains and pulses including wheat, barley, spelt, lentils and fava beans, and supply some of the best bakeries in Melbourne.
